Bimetal refers to an object that is composed of two separate metals joined together. Instead of being a mixture of two or more metals, like alloys, bimetallic objects consist of layers of different metals. Trimetal and tetrametal refer to objects composed of three and four separate metals respectively. Bimetallic strips and disks, which convert a temperature change into mechanical displacement, are the most recognized bimetallic objects used in restaurant equipment.

Controls of all kinds are integral parts of restaurant equipment operation. A control is a switch or other device by which a machine is regulated. A control may be manual or automatically operated. An electro-mechanical control typically consists of multiple relays, timers, and/or counters wired together on an enclosure panel. Electro-mechanical control is also referred to simply as "Relay Control", which is a more accurate term since solid state electronic relays, timers, and counters are standard components. Contactors, motor and compressor starters, valves, thermostats, and other output devices are used to turn on/off motors, indicator lights, heating elements, and other components used in the equipment.

A high limit ( "Hi Limit" or simply "Limit") switch is one of the most important safety features in numerous pieces of restaurant equipment. In the event that your equipment begins to operate at temperatures above maximum specifications, the high limit will shut down the unit. The high limit switch regulates equipment operation by closely monitoring the equipment's operating temperature.
